Cucumber Salad

This Eastern-European salad takes on a more Middle Eastern vibe with the addition of pomegranate and mint.

Ingredients
2 Persian cucumbers, sliced
1 tbsp rice vinegar
1 tsp sugar
3 tbsp chopped dill
2 tbsp chopped mint
1/4 cup pomegranate seeds
Salt
White pepper

Combine ingredients in a bowl. Season with salt and white pepper, to taste. Serve chilled.
